Healthy Lunch Smoothie

This might not sound good to you. I don’t know if it would have sounded good to me a few months ago… during the stage of my life before I had my Vita-Mix. Everything has changed now.
Why has everything changed? Because now I grind up a ton of veggies to drink for lunch. I had been living on peanut butter or almond butter sandwiches for lunch for almost the entire 5 years I’d been living in Colorado. This past January I spent my birthday money (plus some of my own) on a Vita-Mix, and it has changed my life. If you have one, you’ll likely understand. If you don’t, you might find me weird. Either way, here is one of my healthy lunch smoothies.

Ingredients:
  • 1 apple
  • 2 kiwis
  • 1/4 golden beet
  • 1 stalk celery
  • 1 handful parsley
  • 2 carrots
  • 3/4 cup snow peas
  • 1/2 cup frozen strawberries
  • ginger (as much fresh ginger as you like- I used 1 tsp)
  • 1-2 cups water (add more if you like it thinner… or should I say, less thick)
I put it all in the Vita-Mix, turn it up to 10, then high, then it’s done. This makes enough for 2 people to have a ridiculously healthy lunch smoothie.

Sweet and Sour BBQ Sauce

This BBQ sauce is based off of the flavors from a traditional Vietnamese Sweet and Sour recipe given to me by an amazing chef named Duc in Hoi An, Vietnam.

First I made this pineapple and onion mix and sauteed it on medium for 10 minutes until the onions were soft and the pineapple was partially cooked. I used:
  • 1/4 red onion, chopped
  • 4 cloves garlic, finely chopped
  • 1 cup pineapple, coarsely chopped
  • 1/2 cup white wine
  • green onion
I removed that from heat and started to mix together the base for my BBQ sauce.

I combined the following ingredients and mixed well.
  • 1 six ounce can tomato paste
  • 1/4 cup maple syrup
  • 3 TB soy sauce
  • 2 TB rice wine vinegar
  • 1 TB onion powder
  • 1 TB garlic powder
  • 1 TB toasted sesame oil
Then, I put the BBQ sauce base in my Vita-Mix with all but 1/2 cup of the pineapple onion mixture and blended it for 30 seconds or so.

Sweet Green Smoothie

This is another one of my healthy breakfast smoothies. I put all of the ingredients in the Vita-Mix, turn it up to speed 10, then high, then drink.

I make enough for 2 people to have large glasses.
Ingredients:
  • 1 orange, peeled
  • fruit from 1 ripe mango
  • 1/2 head green lettuce
  • 2 leaves Kale
  • 4 beet greens
  • 1 cup frozen pineapple
  • 2 cups cold water
Also enjoy this as a healthy lunch smoothie.

Raspberry Chocolate Chip Ice Cream

I put the following ingredients into my Vita-Mix, turned the speed up to high, and had a fantastic dessert.

Ingredients:
  • 1 cup frozen raspberries
  • 1/3 cup chocolate chips
  • 1/4 cup half and half
