Mango Chipotle Zinger Guacamole

Guacamole has so many variations, almost all of which are fantastic. One combo I’d not yet tried is adding nuts. As I had a drawer full of Olomomo nuts, one of which was their Mango Chipotle Zinger Almonds, a bowl full of ripe mangos, and a few avocados, it seemed like the planets had aligned for my next recipe featuring Olomomo nuts.

Olomomo’s Mango Chipotle Zinger Almonds not only add just the right amount of crunch, the flavor profile is perfect for this guacamole.

It’s just some ripe avocado, cubes of champagne mango, garlic, salt, lemon juice, aleppo pepper, and coarsely chopped almonds. I’d say add as much or little as you like. You know how to make a good guac… You don’t need me to tell you.

Sweet and Sour BBQ Tuna Dinner

This turned out to be a labor intensive dinner, but definitely worth the effort.
I served Sweet and Sour BBQ Tuna (which is tuna steak that has been smothered in my Sweet and Sour BBQ Sauce and grilled), Sesame Soy Avocado Salad, Simple Mango Chutney, Sesame-Lime Snow Peas, grilled yellow pepper, and wild rice. I serve this with extra Sweet and Sour BBQ sauce and some of the extra pineapple onion mixture left over from making that BBQ sauce.

Definitely worth the effort.

Simple Mango Chutney

This is a champagne mango tossed with a shallot in an olive oil and tangerine fig balsamic vinegar.

Here is the shallot, sautéed in olive oil and then tossed with a tangerine fig balsamic vinegar. If I didn’t have this vinegar, I think I would add 1 teaspoon of orange juice and 1 teaspoon on honey to a tablespoon of balsamic vinegar.

Mango Berry Chutney

The secret ingredient in this is homemade blackberry jalapeño jam. Unfortunately, it was a gift. I didn’t make it so I don’t have the recipe. I’d imagine you could chop 1/2 of a jalapeño and add it to 2 TB of a high quality blackberry jam as a substitute. I’ll likely try that next time and let you know.

Ingredients:
  • 1 ripe mango, cut into small cubes
  • 1 small shallot, minced
  • 2 TB homemade blackberry jalapeño jam (sorry to anyone who wants to replicate this!)
  • a pinch of freshly chopped mint
Mix this together and allow it to sit for an hour os so before serving.
