Basil Baked Tofu Sandwhich

Ingredients:
  • 1 cup basil leaves, rinsed
  • 4 cloves garlic
  • 1/2 cup white wine
  • 2 TB olive oil
  • fresh ground black pepper
  • Aleppo pepper or red pepper flakes
  • Sea Salt: 1/2-1 teaspoon, depending on how salty you like your food
  • Onion powder
  • juice from 1/2 lemon
  • 1 cup water
Preheat oven to 400. Let’s review the tofu mantra- buy firm tofu, freeze it, thaw it, press it, slice it, season it, bake it.
Combine all of the ingredients except the water in a food processor. Puree until it is a smooth green paste. Mix it into one cup of water and then pour half of this into a Pyrex baking dish. Place your frozen, thawed, pressed, sliced tofu into the dish and cover with the rest of the mixture. Bake at 400 for 40 minutes or so until the liquid has been absorbed. I toasted some Ciabatta bread and made a sandwhich topped with roasted garlic tomato sauce.
Unlike most of my other tofu recipes, this was made with the intention for it to be accompanied by another strong flavor, like a flavorful sauce, so keep that in mind for a serving suggestion.

Caprese Salad

I make this salad very often, and assume others do too. If not, get to the store, buy some fresh buffalo mozzarella (not the fake stuff that shreds easily), basil, and tomatoes. Or, better yet, go to your garden and pick some tomatoes and basil. I bought yellow and red tomatoes from the farmers market.

This salad tastes best when you are actually in Italy. However, real buffalo mozzarella cheese is widely available in US supermarkets, so we can make a pretty good knock-off.

Easiest directions ever: Slice the tomatoes and mozzarella. Break up or coarsely chop the basil leaves. Layer everything into a pretty pattern. Drizzle with olive oil. Add some freshly ground black pepper. Enjoy.

Lemon Lime Basil Spritzer

This drink is different, but delicious, and perfect in the summer when fresh basil is growing in your garden. This recipe will make 2 drinks.

Ingredients:
  • 1/2 lemon
  • 1/2 lime
  • 1 or more shots of vodka
  • 4-5 basil leaves
  • club soda
Rinse the basil leaves and break them apart. If you have the right tools to make a mojito, mash the basil leaves in the bottom of the cup to release their flavor. Otherwise, use a long spoon to try and mash the leaves a bit. Add the lemon and lime juice, vodka, club soda, and ice. Mix and enjoy.
