Tempeh Barley Burgers

These patties are similar to my original Grilled Tempeh Burgers, but the added barley makes them a little more hearty and healthy.

Enjoy them like regular burgers- with cheese, ketchup, mustard, etc.
Ingredients:
  • 1 cup dried barley flakes
  • 1 red onion
  • 4 cloves garlic
  • 1 package tempeh
  • 2 TB German mustard
  • 2 TB Worcestershire sauce
  • 1 TB tomato paste
  • 2 TB spicy BBQ sauce
  • 1 egg
  • 1/2 cup whole wheat flour
  • pinch of thyme
Barley flakes cook like oatmeal, but take 20 minutes. Add one cup of barley flakes to 3 cups boiling water. Turn down to simmer and cook until all water is absorbed. Let this mixture cool a little.
In a food processor, chop the onion, garlic, and tempeh. In a large bowl, mix the cooked barley flakes with the chopped onion, garlic, and tempeh. Add the rest of the ingredients, one by one in the order listed above, and mix well. Add a little more flour if the patties look like they will fall apart on the griddle.
Cook these like pancakes until they are browned on the outside. Enjoy.

Sweet Potato Black Bean Patties

I’ve really gotten into making patties. They are so easy, healthy, and fun to eat. Almost anything can become a patty. Here’s a new version: Sweet potato black bean. I served these with grilled red pepper, carrot, and yellow squash, as well as homemade guacamole.
Ingredients for the patties:
  • 1 can black beans
  • 3 cloves garlic, chopped
  • 1 large garnet yam, peeled and finely grated
  • 1/2 cup yellow onion, chopped
  • 1/2 TB cumin
  • sea salt
  • pepper
  • 1 tsp dried cilantro (use fresh if you have it)
  • 1/2 jalapeño pepper, finely chopped
  • 2 eggs, beaten
  • 1/2 cup yellow cornmeal
Sauté the onion in a little olive oil until it starts to soften and turn golden brown. Remove from heat. Rinse and drain the black beans. Put them in a large mixing bowl and mash some of the beans with a fork. Add the garlic, grated yam, onions, and mix well. Then add the cumin, a little salt, pepper, cilantro, and jalapeño. Mix this well so all of the ingredients appear to be evenly distributed. Mix in the egg. Finally, add the cornmeal to thicken the batter up a little.
Cook these patties like pancakes.

Chunky Corn Cakes

These corn cakes go well with BBQ tempeh and veggies.

Ingredients:
  • 1/4 Red Onion, chopped
  • 1/3 cup corn kernels (frozen or fresh)
  • 1/3 cup Whole Wheat Flour
  • 1/3 cup Yellow Corn Meal
  • 1 tsp Sea Salt
  • 1 tsp ground Black Pepper
  • 1 tsp Red Pepper Flakes
  • 2 tsp evaporated Cane Juice
  • 2 eggs
  • 3 TB Walnut Oil
Chop the onion and put in a mixing bowl. You can add the corn kernels whole, but I chopped them for a few seconds in a food processor. Add the corn to the onions.

Beat the eggs with the walnut oil and add to the corn and onion mixture.
In a separate bowl, combine the dry ingredients. Add to the wet ingredients and stir until it is thoroughly combined. Cook like pancakes in a hot fry pan.
I served these with grilled carrots, yellow pepper, and red onion, and BBQ tempeh.
