Golden Scallops
Despite being a meal with three components, this dinner took little time to make. It is technically quite simple yet tastes somewhat complex.
Ingredients for Scallops:
- 1/2 TB garlic powder
- 1/2 TB onion powder
- 1 tsp turmeric
- 1 tsp paprika
- pinch of sea salt
- 1/2 cup white wine
Mix the marinade in a bowl. Add the scallops and coat them evenly, and let them sit for 10 minutes or so. Then squeeze some lemon juice on top, stir them a little, and pour them with the marinade into a hot pan. Pan-fry on medium high for just a few minutes on each side. Do not over-cook them or they’ll end up like rubber.
I served these with my Mango Berry Chutney and some Saffron Rice, which was just some jasmine rice cooked with saffron, to which I added some peas at the end.
Saffron Rice:
- 1 cup Jasmine rice
- pinch of saffron
- frozen peas
Mango Berry Chutney
The secret ingredient in this is homemade blackberry jalapeño jam. Unfortunately, it was a gift. I didn’t make it so I don’t have the recipe. I’d imagine you could chop 1/2 of a jalapeño and add it to 2 TB of a high quality blackberry jam as a substitute. I’ll likely try that next time and let you know.
Ingredients:
- 1 ripe mango, cut into small cubes
- 1 small shallot, minced
- 2 TB homemade blackberry jalapeño jam (sorry to anyone who wants to replicate this!)
- a pinch of freshly chopped mint
Mix this together and allow it to sit for an hour os so before serving.
Green Sea Smoothie
Here’s another great healthy breakfast smoothie.
Ingredients:
- 1 kiwi
- 2 pears (I used one green and one red)
- 1 stalk celery
- 1/2 avocado
- 1/2 head of romaine lettuce
- 1/2 sheet of un-toasted nori (seaweed)
- 1/2 cup frozen raspberries
- 1 cup cold water
Throw it all in the Vita-Mix. Start on low, turn it up to speed 10, then high, then enjoy.
Quinoa Pinto Bean Patties

Patties are fun to make when there isn’t much time to make dinner. This recipe is really simple because I planned to serve these patties with a flavorful cheese and guacamole. If you spice them up more than I did, let me know what you added and how they turned out.
Ingredients:
- 1/2 cup quinoa, rinsed
- 1/4 red onion, chopped
- 2 cloves garlic, minced
- 1 cup water
- 1 can pinto beans, rinsed and well drained
- 1 green pepper, finely chopped
- 2 eggs, beaten
- 1/2-3/4 cup yellow corn meal
- sea salt
- fresh ground black pepper
Bring the water to a boil and then add a pinch of sea salt, the rinsed quinoa, onion, and garlic. Stir, cover, return to a boil, and then simmer on low until all of the liquid is absorbed- 20 minutes or so.
Meanwhile, prep the other ingredients. In a large mixing bowl, add the rinsed beans and chopped pepper. When all of the water is absorbed into the quinoa, remove it from heat and fluff it with a fork. Let it sit uncovered for 10 minutes or so to cool a little and then add it to the large mixing bowl. Add some sea salt and pepper and mix until evenly combined. Then add the beaten egg and mix. Next add the cornmeal (a little more or a little less depending on the moisture content of your quinoa) and mix until you have a batter.
Drop 1/4 cup scoops onto a hot lightly oiled griddle or fry pan and pan fry like pancakes for a few minutes on each side. I served mine with a simple guacamole (avocado, mined garlic, squirt of lime, sea salt, pepper) and Tillamook white cheddar cheese. Enjoy.

I have a green smoothie every morning for breakfast, so I will be blogging about all of the really good ones. This smoothie has a nice texture and is just sweet enough to make you completely forget how many servings of fruits and veggies you are getting in one drink. If you’re not into this for a morning smoothie, enjoy it as a healthy lunch smoothie.
Ingredients:
- 2 kiwis
- 1 apple
- 1 stalk celery
- 1/2 green pepper
- 1/2 head of green leaf lettuce
- a handful of parsley
- 1/2 cup frozen strawberries
- 1.5 cups cold water
Throw it all in the Vita-Mix, turn it up to speed 10 for 30 seconds, then high, then enjoy.
